Flourless Jif Mocha Cappucino Hazelnut Cupcakes

Oreos, Chocolate Buttercream, Jif Cupcakes

Only 3 Ingredients and No Flour

Are you a fan of Jif Mocha Cappuccino Hazelnut?  If you are, you might want to try this yummy treat using it!  My kids love Nutella and Hershey's Chocolate Spread and so we decided to try this spread, too.  I used the same brownie/cupcake recipe that I did with my Nutella Brownies but instead, I substituted the Nutella for the Jif Mocha Cappuccino Hazelnut.  This recipe only requires three ingredients and no use of flour.  It won't be as fluffy as a regular cupcake but it will be tasty if you like mocha cappuccino.

Chocolate Buttercream Frosting with Mini Oreo Topping

I made a chocolate buttercream icing to frost these cupcakes with although you really don't need any frosting on these.  The flavor is pretty rich already so this was mostly for my  kids to make it look prettier and since my little girl usually only eats the frosting.

If you want to add the frosting, here is the recipe I used:

1 stick butter
1/2 cup vegetable shortening
1/2 cup baking cocoa powder, unsweetened
1/4 cup white granulated sugar, to taste
4 cups powdered sugar
3-4 tbsp water
1 tsp Pure Vanilla Extract

1. Using an electric mixer, beat butter, vegetable shortening, water and Vanilla Extract on medium speed until smooth and creamy.

2. Add in cocoa powder and white granulated sugar.

3. Add in a cup at a time of the powdered sugar and mix well until all the powdered sugar is well-combined.

4. You can add a tablespoon at a time of water or even milk if frosting is too thick.

5. Frost cupcakes, then top with a mini Oreo on each one.  Enjoy!

 Happy baking. :)
