Black Bean Mango Salad

One of my favorite fruits are mangoes.  I prefer eating them cold and pairing them with certain dishes like this black bean mango salad. This has become a favorite recipe of mine to make for different occasions.  It's cold, tasty and fresh -  a great dish for the summer!  


Since summer is here, I'm trying to keep my oven and stove turned off as much as possible.  Since we love to bake, cook and eat, however, that's going to be a bit tough!  I want to eat more food that doesn't require much cooking or no cooking at all.  


One of the recipes I enjoy eating is Black Bean Mango Salad.  It's perfect for a summer salad and versatile enough to eat as a side dish, as an appetizer, with chips for a snack or as party food and more!


The mangoes bring out the summer taste and adds to the delicious flavor with the other fresh ingredients.


Ingredients for Black Bean Mango Salad


1 can black beans 

1 can corn or use 1 corn on the cob, cooked and peeled

1 large mango, cut in cubes

1/2 cup green bell pepper, cut in cubes

2 tomatoes, diced

2 tsp cilantro

2 stalks green onions, sliced

2-3 tsp lemon juice

2-3 tsp lime juice 

1-2 tsp hot sauce, optional

3-4 tbsp olive oil (or a little more if you want to use as a salsa)

3-4 tbsp apple cider vinegar or red wine vinegar (a little more if you want to use as a salsa)

Black pepper, to taste

Salt, to taste

2 tsp parsley

(Fresh herbs are always better!)


How to Make Black Bean Mango Salad


  1. Rinse the black beans and drain.  Place in a large bowl.
  2. Rinse the corn and drain or cook the corn, then peel.

  3.  Add the black beans, corn, mangoes, tomatoes, bell peppers, cilantro and green onions.

  4.  Add the olive oil, apple cider vinegar or red wine vinegar, lemon juice, lime juice, black pepper, salt, basil, parsley and hot sauce, if you want some spice to it.  Taste a sample and if you need more seasoning or vinegar, add a little at a time.  If you want to eat with chips as a salsa, add more of the liquid ingredients. 


This dish is also delicious with tacos and works well with fish.  Hope you try this out for your next gathering!  I like to enjoy this recipe during the summer but you can make it for any season.
